I must admit, with 4 days of sunshine since April 1st here in the Pacific Northwest I'm finding it hard to believe that the summer solstice is upon us.
To *celebrate*, we spent the day canning the first produce of the season. Strawberries.
So far we have 12 pints of strawberry lemonade concentrate and 12 jars of strawberry freezer jam - which we prefer for the fresh taste over water bathed strawberry jam.
The Little "helped" by taking the largest strawberries, biting off the end, and then putting the rest of it back. Ahem.
Please pardon the horrible photo - I was too tired after a day of canning and crafting to worry about my flash.
Preparing for much more canning this summer.
