Last Fruits of the Season
I promised myself that I was done canning after my crabapple fiasco, but alas, I find that canning is an addiction. A tasty one at that.
This week we picked up a 1/2 bushel of beautiful Bartlett pears from a local produce market for a song. After letting them ripen for a few days on my counter, I decided to bite the bullet and pull out the canning equipment again. I'm not sure how I thought I would get around this step. After all, what else does a family of 3 do with 25lbs of fresh pears?
Having already canned 8 quarts of delicious pear sauce this summer, I decided I would simply halve the pears and can them in a simple syrup with some pure vanilla bean. The results were outstanding! These pears have such a light, delicate flavor and are beautiful to look at too. I almost don't want to open the jars they are so pretty. But I will. *wink*

I so wish I wasn't afraid of canning, because your photos look so yummy! For this mama, I think sticking freezing apple pie filling and applesauce will be as much fruit as we'll be saving this year:)
