By popular request, here is the strawberry lemonade concentrate recipe we use every summer. I *believe* it's from the Ball Big Book of Canning.
We've also done this with blueberries, peaches, raspberries and made cherry LIMEade with the same measurements.
6 cups fresh or frozen strawberries - hulled and lightly crushed
4 cups fresh lemon juice - from the bottle - acidity in fresh lemons varies too much
6 cups sugar
If you do not want to process this concentrate in canning jars, freeze the concentrate in 1 to 2 cup portions.
Directions:
Puree strawberries in a food processor or blender until very smooth. Mix pureed berries, lemon juice, and sugar in a large pot and bring up to about 190°. Do not bring to boil.
Prepare canning jars and lids for processing. Ladle concentrate mixture into pint jars, leaving 1/4 inch head space. Process in a boiling water bath for 15 minutes.
Mix with 3-4 pints water or club soda (our favorite) and enjoy!

ReplyDeleteI use an entire pint jar of the concentrate mix with 3-4 pints of club soda - depending on how sweet I'm looking for my lemonade to taste.
